Ingredients:
1/2 pkg. HEALTHY HARVEST® Linguine, uncooked
1 can (10-1/2 oz.) ready-to-serve low sodium chicken broth
1/4 cup skim milk
1 tablespoon olive oil
1 cup sliced fresh mushrooms
3/4 cup fresh broccoli florets
3/4 cup diagonally sliced carrots
3/4 cup small fresh snow pea pods
1/2 cup chopped onion
3 cloves garlic, minced
1 tablespoon chopped fresh parsley
3 tablespoons all-purpose flour
1 can (6-1/2 oz.) chuck tuna in water, drained and flaked
2 tablespoons grated Parmesan cheese
2 tablespoons sliced almonds (optional)
Directions:
1. Cook pasta according to package directions then drain.
2. Meanwhile heat broth and milk in a small saucepan.
3. Melt margarine in a large skillet.
4. Add vegetables, garlic and parsley; cook until vegetables are tender.
5. Stir in flour.
6. Gradually add broth mixture, stirring constantly until mixture is thickened and bubbly.
7. Stir in tuna and cheese; serve sauce over hot pasta.
8. Sprinkle with almonds, if desired.
