Ingredients:
1 pkg. RONZONI HEALTHY HARVEST® Rotini, uncooked
4 oz. sliced pepperoni, cut into halves
1 cup chopped zucchini
1 cup chopped green pepper
1/4 cup chopped fresh parsley
1/4 cup chopped pimiento
1/4 cup sliced ripe olives
2/3 cup olive or vegetable oil
3 Tbsp white wine vinegar
1 Tbsp Dijon mustard
Salt and ground black pepper to taste
Directions:
1. Cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.
2. In large bowl, toss cooled pasta with pepperoni, vegetables, parsley, pimiento and black olives.
3. In medium bowl, combine oil, vinegar, mustard, salt and pepper. Beat vigorously with fork or whip until thick and creamy. Pour dressing over pasta mixture; blend well.
4. Cover; refrigerate to blend flavors.
Servings: 6-8 people
